Previously, I simply grew seeds in an egg carton and transferred them to pots. I did this last spring. After the cats have eaten most of the leaves and became butterflies, should I trim back the plants to grow more leaves?

Yes, a period of cold is good for seed germination.
You can trim the plants back if you like or just leave.
