Unfortunately there is a long list of possible pests or critters that could be responsible for eating your Lettuce.
Caterpillars, beetles, slugs will dine on your leafy greens but it generally won’t disappear in one night.
Rabbits, Squirrels, or Deer could be responsible also for eating a garden and leaving nothing.
Look for any signs of footprints or bite marks.
