Leaves being eaten

Three days ago I planted a number of organic seedlings. Since then, the leaves of the basil, eggplant, and particularly the zinnias have been attacked by something that finds them tasty. Any idea of culprits and what I can do about them, at least while the plants are smaller and more vulnerable?
