Gardening Know How Questions & Answers - https://questions.gardeningknowhow.comWe live in central NC and several of our knock out roses have been chewed into right below ground level. It is has been eaten right through the woody stem. See picture. Not sure if this could be a mole or what.

It sure sounds like you have a Voles problem to me. I would contact a pest control outfit there locally and take appropriate and recommended action ASAP. They can be very hard to get rid of and having a reputable pest control company look at the situation is the best direct way to go.
