Keeping Eggplant on Bush

I have 1 plant with 4 eggplants on it which are different sizes: 1 is a little bigger than a softball and 3 about baseball size. Can I leave the bigger one on the plant until the other 3 are big enough to use? I want to make some Parmigiana, so I need all 4 as big as possible. Or do I need to pick the bigger one and hope it doesn’t go bad before the others are big enough?

These are normally picked once they reach six to eight inches in length. Also, the younger the better as they will be more tender than those left on the plant longer.
