Indoor orchids

Once the blooms die, I notice the stem turns brown. Do I trim it off? Also, there are a lot of shoots coming from the bottom of the plant. Are these off shoots wanting to root? If yes, then what do I do?

Yes, you should trim off the brown stem after the flowers have faded.

The shoots coming from the bottom of the plant are most likely the aerial roots that orchids naturally produce, so you should leave them in place:

Orchids will sometimes produce offshoots with a baby orchid growing at the end, but these are usually produced from the top of the plant:
