easy care plant for wine barrel

Question

I work at a winery. We have a few old container wine barrels that I would like to plant a low maintence herb or flower in for direct sunlight. What would do best? Would like a easy plant to maintain since the boys here do not keep up well with it, and I am only here 3 days a week.
