I sprinkle used coffee grounds in my planters to boost nitrogen. What symptoms will the plants show if there is too much nitrogen in the soil?

I end up using about as much as 6 tablespoons of coffee grounds 2-3 times per week.

Too much nitrogen typically shows up as flowering plants that have lots of green leaves but no blooms. It’s almost impossible to create nitrogen toxicity. The amount of nitrogen contributed to the soil by coffee grounds is rather low, but it’s all good.
