All of my plants are the dark green that they should be but I have 2 plants that are a light green in color and I don’t know why. Is there a reason for it?

This typically indicates a lack of nutrients. I would try giving them a water soluble fertilizer (either a chemical kind or compost tea), and that should bring them around quickly
