plant it in garden,i know they can grow to 20m but i want to keep trimed to 3 metres,would it still bear fruit at this hight.

There is no way to keep a Date Palm from growing it's mature height by pruning it.
If you want to grow a Dwarf Date Palm; they have a mature height of 8 to 10 feet.
