k blossoms, one has pink and white blossoms and two have white. How is this possible if they are Natchez?

If a ‘Natchez’ crape myrtle is blooming pink, it could be due to a mix-up in plant labeling or some unusual factors, but an initial pink color is not characteristic of that variety. If mislabeled, maybe it could another variety such as 'Tuscarora', 'Sioux', and 'Muskogee'.
