Gardening Know How Questions & Answers - https://questions.gardeningknowhow.comit be removed so that it doesn’t take energy from the rooting process? I live in SW Florida so spring is here. My plants all seem healthy and are about 2-3′ tall. I’m not sure how far I should cut them back.

Yes, I would remove the "shrimps" from the cuttings. You can cut them back as far as you need to for the cuttings. It shouldn't hurt them. Cutting them back will promote more growth and more shrimps.
