Yes, you can harvest the seeds and plant them.
Wait until they become papery on the plants before harvesting. They should then be dried further. You can place them in a paper bag in a well ventilated area.
Shake them every so often to help loosen the seeds inside.
After drying you can store them but is best to plant right away.
You can place in the ground in late summer through fall. Hyacinth grown from seed may take a few years to flower.
