How to store and clean up Orchids?

We have 6 pots of Orchids and all have ended flowering.
To store for awhile, can we remove/trim the white root growths? Leaves?
Do we water once per week (we use 3 ice cubes or 1/4 cup of water), leave alone or water once per month?
What type of fertilizer, if any, should we use?
