How to Save Carolina Cross Watermelon Seeds

I saved seeds from Carolina Cross watermelon, so when it dries up it becomes very flat. What could be the cause of it? And how to do I prevent it?

This seed is immature. It would seem the fruit was picked to early. I would let the melons go a little longer before you harvest. They should be dark black in color. These white seeds will not germinate.
