Gardening Know How Questions & Answers - https://questions.gardeningknowhow.comMy Rhubarb is going to seed and the temps are going down (I’m 60 miles west of Chicago). Should I allow it to go to seed/flower and leave all the stalks on over the winter or pull them all off, cut the flowering stem off and say thank you for all you’ve given this season?

Let the stalks die down naturally, when they have perished in the first frost or two, remove them.
You can add a touch of mulch to the plant and crown to add some winter protection.
In my zone 4 garden I don’t mulch and have no issues with my plants surviving in a sheltered location.
