How to prune and pollinate

My trees are three years old, look healthy and full. They blossomed the end of Feb and early March but no pollination. Also, how far can I cut them back this fall without killing them?

It is difficult for me to determine the type of tree that is in this image.
Can you identify the tree variety for proper pruning information?
