Q.How long can you leave beets in the ground before harvesting?

I have a number of beets in the ground, maturing and want to know how long I can leave them before harvesting. We’re coming to the end of summer here and want the beets to stay in the ground as we eat our way slowly through them.

If they get too large they can become fibrous. Better to harvest when at the stage you want then store. Here is how:
