While it's okay to prune some, you should only try to remove the growing tips so as not to leave large wounds that may draw pests and diseases. Also, you may want to treat the plant with neem oil, a safe and effective pesticide and fungicide, in the event that any pests or fungal issues do arise. Other than that, you should just keep it watered. This article has more information about neem oil: https://www.gardeningknowhow.com/plant-problems/pests/pesticides/neem-oil-uses.htm

If you haven't yet read it, this article will help. Though it focuses on squash, it would apply to pumpkins as well: https://www.gardeningknowhow.com/edible/vegetables/squash/should-you-remove-squash-leaves.htm
