Adequate water and fertilization is important to support foliage health, but the white fungus may very well be contributing to the premature leaf drop.
30 foot trees are too big for do it yourself spraying of a fungicide, so you may consider getting an assessment and quote from a tree service with “plant health care” specialist division, like Bartlett Tree Experts.
