How do I know when leaf lettuce leaves are mature?

I am a novice at growing veggies. I planted leaf lettuce last spring and nothing really sprouted. This year, I have a few plants. Two of the plants are almost 4 ft tall. When do I harvest? How do know when the leaf is mature to harvest and enjoy? Are the plants supposed to grow that tall?
