How do I know if my Sweet potatoes are cured?

I picked them a few weeks ago and left them outside for several more days. One side seems redder and smoother than the other side. Should I recure them?

Hang them in a warm dry place to finish curing, maybe another week? Maybe a little more. This article has some more information: https://www.gardeningknowhow.com/edible/vegetables/sweet-potato/harvesting-sweet-potatoes.htm [1]
