Q.Harvesting onions

We have about 50 onion plants (I don’t know what kind). They were growing just fine and then the tops began to fall over. They have not stood up again after watering and we are wondering if we need to get them out of the ground. The tops are still somewhat green but are lying down.

If they are falling over they are done.If left they will bolt.
I pull mine up and leave them on the ground to dry.Then hand them up in a cool dry place.
Not a garden pro or master gardener.Just the way I harvest.
