Q.growing potatoes in pots

an organic potato sprouted before I could eat it; I cut it up and planted in a couple of pots in organic soil. Plants look really happy! How do I know when to harvest them as fingerlings? How do I continue to propagate them? Thanks! No ability to upload a photo, i don’t have a smart phone.

Unless these are actually fingerling varieties, I think you're just hoping to harvest them before they grow large. I know with regular-sized potatoes, waiting until the leaves turn yellow means the potatoes are mature, so you may want to just pull one up or feel around in the soil before the leaves turn yellow to judge how much more growth you want for them.
