I live in Murphy, N.C. Will gardenia survive a winter here if planted outside in spring?

Murphy is zone 6b. Most Gardenias are hardy to zone 7 but it is possible for them to survive freezing temps if you take a few extra steps. Here is an article that will tell you a little more about over wintering;
