Is it necessary to deadhead the blooms on gardenia bushes after they are finished blooming? I have several bushes that are quite large and they are full of blooms. Is there a way to get a second bloom later in the summer?

Yes, you can remove the blooms to encourage more blooms. When the flower turns yellow, pinch it off at the base of the bloom. But be careful not to pinch off any buds that may be forming.
