My gardenia is about 5 ft. and the leaves are brown and crisp; we did not prune last year after it bloomed. What do we do now?

Your Gardenia should be pruned after it has bloomed.
If your plant has suffered some die back, you can prune that any time.
Gardenia are finicky plants. Indoors, lack of humidity is a big issue.
Outdoors, winter conditions or cold can harm your plant.
