Q.Freeze Protection

How does putting a sheet over a plant protect it from freezing? I know a sheet over me would not be much help. Never have been able to figure this out.

It helps to keep the stored heat from the plant and ground localized to the plant and helps keep the truly cold temps at bay for a short period of time. It works similar to the insulation on your house.
