elephant ear overwintering

Should I wait until the foliage on my elephant ear is starting to decline to take the tubers in for the winter? Or can I take the tubers out at any time?

While it is normally better to let the foliage die back naturally before digging them up for winter storage, you can trim the stem back to about 3 inches from above the tuber. The tubers can then be removed and stored.
