Eggplant Plants

Eggplants Are Yellow Instead of Purple

lisarudderow added on August 10, 2015 | Answered

My one eggplant should be producing large black/purple eggplant. They started out yellow from the beginning. I've not had one purple or black eggplant from this plant all season. Are the yellow ones safe to eat?? My plant is covered with them and they are good size.
