Q.Dwarf Peaches, Will Heat Effect Peach Ripening?

When it’s in the upper 90’s lower 100’s they become like mushy, or used to say mealy. How do you decide when to pick by temperature or by taste? I haven’t been thinning out our tree, I see natural selection by the tree it drops the weaker as the rest grow bigger. This is a bumper year, last year not as many peaches and not as sweet. I live in an 88005 zip code. Any advise will be appreciated. The tree is maybe between 8-12 yrs old, I planted it on the East front of the house.
