Q.Did I Ruin My Sunflower Seeds….?

I cut the head off one of my sunflowers to dry out inside but I noticed the seeds were all white and there was no black stripe. Will the seeds continue to ripen while its hanging inside or did I cut it off too early? I want to roast and eat the seeds. And will the black stripe still show up even though its off the stem? Thank u.

Unfortunately, your photo did not come through. Some cultivars show the stripe and some do not. This depends on the cultivar that you chose.

Also, they should be fairly ripe before cutting the head. They will ripen a little, but not enough to make a difference.
