Did I Ruin My Sunflower Seeds….?

will sunflower seeds continue to ripen and get a black stripe if i cut the head off the stem a little too early?

I have answered in the original, but just in case it didn't go through- It really depends on the maturity. If they were really close, it won't hurt anything. If they hadn't changed colors yet… Probably, they won't much after harvesting.
