Will daily watering from top over crops influence pollination?

If you consistently water your garden during Bees feeding time, they will seek other sources of food.
Bees do not like to fly into large water droplets. They lose their pollen they have gathered. They also become confused and may not be able to navigate.

Water early morning or early evening.
