Cutting my lemon tree trunk

Hi, I purchased my home about 2 years ago, and I have these 2 beautiful lemon trees that I wish to train correctly. They are about 8 years old. I have sent you pictures on the 2 trees.
My question is, my trees are sprouting several trunks, what should or can I do to keep the tree strong without hurting it? Thank You.
