Can we use a weed eater to remove the many sprouts around the base of our crepe myrtle tree?

No, this is not a good method to remove suckers from around the base of the tree.
A weed eater can easily damage the bark and trunk, which in turn can weaken the tree and make it vulnerable to pests and disease.

Use a small hand pruner to remove the suckers.
