Q.Coverage Between Flagstone

We have a courtyard that has flagstone to walk on. There is about a 1-2 inch gap between each flagstone. We were using pebbles to put between the rocks, but would like to switch to foliage. We would like a low to the ground coverage (no more than an inch or two high). We live in Zone 7 (west TN). It will get full sun, low water, and hot and humid conditions. What would you suggest? I do not want it to cover up the stones.

Plants that tolerate hot, dry conditions include low-growing thyme and sedum, which would make excellent choices.
