Once coriander bolts, can it be cut back and will it regrow for the next season?

Once it bolts, it cannot be reversed. It is best to replant new seeds. Actually, with cilantro, it is best to plant new seeds every few weeks to keep a constant supply of cilantro growing. It is annual, so will not come back next year. Here is more info on bolting cilantro plants:
