Coffee Tree

I have a beautiful coffee tree about four feet tall and maybe three years old that is bearing quite a few beans. How do I know that the beans are ready to pick? Also, they have a tendency to disappear. Do the birds or squirrels eat them? How can I find out what kind of coffee it is?

I don’t have an answer but I would love to have a coffee tree. Do they grow in Central Texas?
