Coconut Growth in Water?

I would like to make wedding table centerpieces where I have a young coconut palm growing from the nut in water with no soil. Is this idea feasible? I had been to a party once where the coffee table had a coconut palm growing from the nut in a bowl with water and some clear stones and always thought that looked great.

If you can find enough sproutable coconuts and you have enough room, this would be feasible.
