Caring for Matthiola incana – stock

How do I know where to cut the stem to dead head my stock flowers. I also would like to plant them in my garden (they are in pots right now) and see if I can encourage another bloom in the fall when the temps go down. I live in zone 5b.

Also, I would like to see if I can protect them over the winter and see if I can have stock flowers from these same plants next spring. Is that possible?
