Can you safely eat cauliflower that has spread out?

Instead of the cauliflower making heads, it has spread out and has purple on them. We picked them but do not know if the heads are safe to eat.

You can eat it, but it will probably be grainy or bitter. Here's some information on harvesting cauliflower that might be useful to you in the future; https://www.gardeningknowhow.com/edible/vegetables/cauliflower/harvest-cauliflower.htm
