Can You Cut Off Top Of Tree And Will It Fill In With New Growth At Lower Part?

my tree us an older tree. It has wonderful fruit. Can I trim off top as so tall and will it give new growth lower?? Hard to reach fruit up so high. When I cut lemon tree I get new growth
