Can the potato be eaten after the vine has died?

I bought a sweet potato vine at at a local nursery. The vine was bright green so I may be wrong about it being a sweet potato. Now that the plant has died, can the potato be eaten? I don’t know if this is a silly question, but was curious. Thank you.

Yes, the tubers are edible, but they may not be as good in taste or texture as tubers that are grown as vegetables.
