Q.Can Any Plant/ Tree Be Made Into Bonsai

I am interested in the art of Bonsai. Can and tree plant be used. I have a Russian olive tree that refuses to die off, bringing up new shoots all the time. Can this be used and if so, when do I start it, and do I cut the sapling free. Can Bonsai be made from bushes, or shrubs..?

Yes, just about any tree, shrub, or vine can be a bonsai. The Russian olive would be a good specimen if it wasn't grafted (The shoots would be from a different root than the canopy.) These articles should help:
