I cut my calla lily plant in half with a knife to separate. The cut went through the bulb. Will my plant die? What is the proper way to separate a plant like this?

It should be ok, as long as there is still some root and plant attached the bulb (rhizome) should be fine. Just replant and take care of as usual. With calla lilies, as with iris, you simply separate the rhizomes and replant. Big clumps may be more difficult to pull apart, so cutting with a knife or spade is sometimes necessary. Oftentimes, the bulbous parts are cut but will still grow.
