broccoli

Question

I got the plants in late (June) but they have done well. The heads look weird and I don’t know if I need to cut them now. See the yellow parts and the blue/green parts. The green is starting to open up but the yellow has a ways to go to even open. What should I do? It is hot here and is going to stay that way for a while.
