Bolting Celery

I have a lot of Celery which has, I assume, bolted because of the very rainy season. All have flowers. Can I harvest them for soup? The stalks are rounded and not cresent shaped, but fairly thin.

Yes, there are many people that simply harvest the bolted celery and chop it up for use in soups. Generally, bolting is caused by too much heat (which many of us have had) rather than rain.
