Are you talking about bolting, where the plants start flowering or getting leggy, where seedlings get really long? If you are talking about preventing leggy seedlings, this article will help: https://www.gardeningknowhow.com/garden-how-to/seeds/leggy-seedling.htm To keep plants that are prone to bolting, you need to keep their soil cool. Mulch helps. This article about broccoli (which is the most prone to bolting) will help: https://www.gardeningknowhow.com/edible/vegetables/broccoli/bolting-broccoli-growing-broccoli-in-hot-weather.htm
