Bok Choy Plants

Q.Bok Choy Harvesting

I planted bok choy from a seedling I bought at a Bunnings store. It’s been about a month now and they have gotten stalks with yellow flowers growing from the centers. Is this right? Was I meant to harvest them before this happened? I have no idea about growing veggies but am wanting to learn and grow my own. Please help.
